Beef Potjiekos
A slow-cooked layered stew made in a three-legged cast-iron pot over coals β the trick is patience, and never stirring.

Ingredients
- 1 kg beef shin, cubed
- 2 onions, sliced
- 4 carrots, chunked
- 4 potatoes, halved
- 2 cups beef stock
- 1 cup red wine
- 2 tbsp tomato paste
- Thyme, bay leaves, salt and pepper
Method
- Brown the beef in oil in the potjie over a small bed of coals, then lift it out.
- Soften the onions, return the meat, add the stock, wine and tomato paste, and bring to a gentle simmer.
- Layer the vegetables on top β do not stir β cover and let it cook low and slow for 2β3 hours, topping up coals as needed.
- Season, give it one gentle fold, and serve straight from the pot with rice or pap.
