Braaibroodjie

The classic grilled cheese, tomato and onion sandwich cooked in a hinged grid over dying coals β€” the unofficial side dish of every braai.

Ingredients

  • 8 slices white bread
  • Soft butter, for spreading
  • 200 g mature cheddar, grated or sliced
  • 2 tomatoes, thinly sliced
  • 1 small onion, thinly sliced
  • Chutney, salt and pepper

Method

  1. Butter the bread on the outsides so it crisps against the grid.
  2. Build four sandwiches with cheese, tomato, onion, a smear of chutney and a pinch of salt and pepper.
  3. Clamp them in a hinged braai grid.
  4. Braai over gentle, dying coals, turning often, for about 6–8 minutes until golden and the cheese has melted.
